@ H – thanks so much for spotting this inconsistency! Much appreciated 🙂 You CAN add in the cooking water – the fear about nitrate poisoning from the cooking water appears to be unfounded, and plenty of recent puree recipes indicate that adding in the carrot cooking water is perfectly safe 🙂
